The Knights of Columbus Council 8417 of Waxahachie will host its fourth annual State Championship BBQ Cook-off on Feb. 28 March 1 at the Texas Motorplex in Ennis. The event is sanctioned by the International Barbecue Cookers Association (IBCA).

Teams are invited to register for the cook-off beginning at 9 a.m. Friday, Feb. 28, and ending at 5 pm. The cook-off will follow IBCA rules, which will be provided to each team at registration. These rules can also be found at the IBCA website at

Meat entries for the cook-off are chicken, pork spare ribs, pulled pork, and brisket. The entry fee is $125. Teams will be provided a 20-foot by 40-foot space for one vehicle and cooking equipment as well as limited electrical and water utilities. There will be trophies and cash prizes ranging from $75 to $300 for the top 10 winners in each meat category.

The Knights would especially like to encourage young people and youth groups to take part in the cook-off. Youth teams are invited to enter the pork chop competition. The Knights will provide two pork chops to the first 50 entries, and each youth team must prepare and cook their entry on their own. Youth categories and entry fees of only $10 for the pork chop competition are (1) under age 11 and (2) ages 11 17. Youth teams can also participate in the cobbler competition for a fee of $15. Youth groups and organizations are encouraged to join in the cook-off. Winners of the youth pork chop competition will receive a charcoal grill and the winner of the cobbler will receive a 34-piece Expressions Deluxe Anchor Ovenware Set.

The proceeds from the event will go to benefit several local charities supported by the Knights of Columbus as well as Waxahachie Care and the Wounded Warriors Project. There will be several special events including BBQ sauce, youth pork chops, pinto beans, and cobbler. Proceeds from these events will go to support the Wounded Warriors Project.

The Knights also invite members of the public 18 or older to join as Field Judges (Tasters). To make this event a success, the event will require 150 tasters to sample and score each entry to determine the winners. Each judge will receive an event T-shirt and a ticket to win a BRINKMANN 4 Burner Gas Grill.
