The Waxahachie Knights of Columbus has teamed with the Ellis County Youth Expo Association for a fundraising event March 25 and 26 at the Ellis County Expo Center. Proceeds from the event will benefit the Ellis County 2011 4H and FFA Live Stock Show as well as Knights of Columbus Council 8417.

Dennis Williams with Knights of Columbus Council 8417 is coordinating the event. He said the goal is to raise money and split it between both organizations.

“Knights of Columbus supports a wide variety of charities,” he said, saying they were pleased to have the opportunity to support the youth and all that they accomplish.

“This will support the Bluebonnet Belles Scholarship for graduating seniors who have shown at Ellis County Expo. We give it away every year at expo during the livestock show and this year it will be between March 28 and April 2,” said Ellis County 4H and youth development agent, Page Bishop. “This is excellent for us. The Knights of Columbus will handle all the details and the kids will benefit.”

The fundraiser will kick off with a fish fry dinner Friday at 5:30 p.m. followed by country western dance from 8 p.m.-midnight. Music will be provided by Iron Horse Creek Band. Admission to the dance is $15 for singles, $25 for couples and students with a valid student ID will receive a $5 discount.

The youth pork chop cook-off will be held Friday night as well. The entry fee for children 10 and younger is $15 and age 11-18 is $20.

The IBCA sanctioned barbecue cook-off categories include brisket, chicken and pork spare ribs with a $75 entry fee. Additional competitions include pinto beans ($15 entry fee), and cobbler ($10 entry fee). Cooks will set up on Friday at the expo center with tasting and judging of entries to be held Saturday. Cash prizes and trophies will be awarded Saturday afternoon.

Raffle tickets for a custom barbecue pit will be available at the event for $3 each or 4 tickets for $10 or 10 tickets for $20. Winners need not be present to win.

“I have deemed myself as project coordinator (of the fundraiser),” Williams said, saying he has been planning this for about two years and hopes it will become an annual event. “We invite anyone to participate and show off their cooking skills. If this is successful I will be a hero and if it isn’t, I will be something else.”
