Two Amigos Taqueria has become a staple in downtown Waxahachie, offering up their own flavor of Mexican cuisine to hungry diners over the past 16 years. The restaurant has now entered a new chapter as construction has begun on its new building located on Monroe Street.
The new restaurant is set to open in January.
Owner Rogelio Aguilar said building and growing the restaurant has seen is a true labor of love.
“When I was really young I used to live in Dallas and when I got married I moved to San Antonio. I came back because I was looking for a small town and in San Antonio, there is a lot of competition,” Aguilar said. “I used to have a restaurant in San Antonio, it was called Tios Mexican Resturant. After Sept. 11 we were hurt pretty bad. There was a lot of military bases around the restaurant and everyone was going in different directions with the war. A lot of people moved from the area and the economy was not that good at the time".
Aguilar stated that he came to Ellis County and searched for a location in several cities. He settled on Waxahachie because he wanted to start small.
“The first year was kind of tough. I had my bills paid and everything, but it was a little slow. After a while, we started to get a little busy. After the first two years, business started growing,” Aguilar shared. “About five years ago we opened the other side of the building. We have been very blessed.”
He noted that he and his family have worked hard to establish the restaurant's reputation in the community with its quality service and food. He takes pride in offering his customers the best from his kitchen. Two of the items that are popular on two Amigos' menu is the giant burrito, which is made with a 12-inch tortilla, and its breakfast tacos.
Aguilar said he feels fortunate to be able to work alongside his family each day and to have the support from his customers.
“It is a great feeling to have your family around you when you feel like you're down," Aguilar said. "The next thing you know they will pick you up, make you smile, and make your day.”
The idea for a new building came after Aguilar’s son, Shorty, had a conversation with builder Chris Acker, who is constructing the new townhomes in the downtown business district. Shorty told his father that the location on Monroe Street would provide a great location for the future.
“He came to me and said, ‘what do you think dad? In the future, this is going to be one way going this way and one way going the other way (because of the Viaduct project).' He said, 'this is going to be a really, really good location,” Aguilar recalled. “We have been talking to Chris, and we have got to the point that we went to the city and the Heritage Preservation Commission and got approved by them. They have broken ground and are getting ready to lay the concrete. It is coming along.”
The new building is going to be located on Monroe Street next to the new townhomes that are currently under construction. The building is going to be 2,000 square feet as compared to its current location that only has 1,200. The dining area is going to have 20 tables and an outside patio. Currently, the restaurant only has 14 tables.
“The kitchen is going to be a lot more organized. The way it is set up right now it is like we are in a corner at an angle. It makes it harder for the customers and harder for us to operate,” Aguilar said. “I think that we will be able to set up a waitress station to where the food comes out instead of going back and forth.”
Aguilar added that customers should expect the same quality service and great food when the new building opens its doors in January.
While the building is under construction, Two Amigos Taqueria will still operate out of its current building located at 212 W. Jefferson St. in downtown Waxahachie. The restaurant is open 7 a.m. – 3 p.m. Monday – Wednesday, 7 a.m. – 8 p.m. Thursday, Friday and Saturday, and closed on Sunday.
