The Dallas-based fast-casual chain with a location in Waxahachie, renowned for its all-natural, wood-fired rotisserie chicken, is gearing up for the season with a scorching-hot lineup of the best sandwiches, sides and salads under the sun.

“There’s something about summer that just calls for big flavor,” said Sean Kennedy, president and CEO of Cowboy Chicken. “Our signature chicken and made-from-scratch sides are ideal for any picnic, backyard bash or summertime lunch or dinner.”

Leading the charge is a pair of Texas-sized sandwiches.

The trusty Laredo is a favorite for its generous helping of rotisserie chicken breast topped with house-made guacamole, chipotle mayo, seasoned chicken cracklins and melted cheese on a freshly toasted bun. Not to be outdone, the tasty BBQ chicken sandwich earns its spurs with a heap of pulled chicken slathered with Cowboy Chicken’s tangy BBQ sauce and melted cheese, also served on a toasted bun.

Guests can complement these satisfying sandwiches with a pair of sides newly added to the regular menu. The roasted veggies side boasts a skillet filled with cauliflower, broccoli, red onion and carrots, while the Kaleblazer slaw is a hearty mix of kale, Brussels sprouts, Napa cabbage, red cabbage, carrots, radicchio, cranberries and slivered almonds, drizzled with a blush wine vinaigrette.

Since nothing partners with a summer meal quite like watermelon, Cowboy Chicken is offering two ways to enjoy the taste of this delicious summer staple.

All season long, guests can order juicy, fresh-cut watermelon slices as a side, or enjoy a refreshing glass of the popular watermelon tea. Inspired by generations of Texas watermelon growers, this tea marries Cowboy Chicken’s signature watermelon flavoring with its light character black tea.

And don’t forget dessert, states a company press release.

"A sizable serving of peach or blackberry cobbler, made fresh daily, is sure to satisfy the most selective sweet tooth," the release notes.

These seasonal offerings are accompanied by the restaurant’s roundup of savory summer salads, including the Monterey, the Southwest chicken salad, the West Texas Caesar, the tangy tomato and cucumber and the fresh, flavorful garden salad. Salad dressings include house-made ranch, balsamic vinaigrette, chili lime and house dressing.
